Night mechanical harvest, cooling after gentle destemming and crushing

Soft pressing and selection of the best juices by tasting

Controlled fermentation temperature

Ageing on fine lees

Minimal use of sulphites

Tasting

The color is glossy yellow with green glints

The nose reveals complex aromas of white peach, pear and pineapple

The attack is lively and fresh

The finish is persistent with aromas of candied lemons and salty notes

 

Cellaring potential

Two years in good storage conditions
